Grocery stores and markets

A restaurant loses a walk-in and loses prep. A market loses a rack and loses a whole department in front of customers, which is why case work is judged on appearance as much as temperature.

Long runs of open case work

Supermarkets and larger markets run multideck cases on shared racks, where one condensing unit problem empties a department at once. Diagnosis has to separate a rack-level fault from a case-level one before anyone starts pulling panels, because both produce the same warm-case complaint.

Open cases hold temperature with an air curtain, and that curtain is easily broken, product stacked above the load line, a slowing evaporator fan, a door opening onto the aisle. In every one of those situations the refrigeration reads perfectly normal while the product warms.

Greater Boston’s market landscape

This region has an unusually deep independent and ethnic grocery scene, and it is heavy on exactly the equipment that fails visibly. Quincy’s Hancock Street corridor holds the largest Asian grocery and restaurant cluster south of Boston, anchored by large-format stores running live tanks and long display runs. Malden Center carries a similar load for its footprint. Chelsea has one of the densest concentrations of immigrant-owned food retail in the state, and it sits next door to the wholesale district that supplies it. Brookline’s Coolidge Corner runs kosher markets and kitchens keeping separate meat and dairy refrigeration lines.

Presentation problems are refrigeration problems

  • Fogged glass on merchandiser doors is usually a failed anti-sweat or mullion heater, and it costs sales immediately
  • Water on the floor in front of a case is a slip hazard and a drain or condensation fault, not a mopping problem
  • Uneven case temperature along a run points at a fan or uneven coil icing, rarely at refrigerant
  • Frost on packaging tells a customer the product has been through a temperature swing, whatever the case reads now

Live tanks and specialist storage

Fish markets and Asian grocers frequently run live tanks, chilled seafood display and dedicated butchery cold rooms alongside standard grocery refrigeration. These have tighter tolerances and less margin for a slow response than a dairy case does.

Common questions

One case in a run is warm and the rest are fine. Is that the rack?
Probably not. A single warm case in an otherwise healthy run usually points at that case, its evaporator fan, its defrost, or its air curtain. A rack fault normally takes several cases together.
Can you service refrigeration overnight so it does not disrupt trading?
Yes, and for case work that is often the sensible plan. Overnight work avoids doing it in front of customers and lets product be moved properly rather than in a hurry.
Do you work on live tanks?
Yes. Tell us on the call. They run tighter than a display case and the response priority should reflect that.
